Save your citrus peel and macerate with sugar to create an ‘oil syrup’ to use as a classic flavouring in cocktails and punches Oleo saccharum is a citrus syrup used in bartending, and is made by macerating citrus peel with sugar. Although it’s easy to make, it has a complex flavour profile that works brilliantly in all manner of cocktails and even in cooking: mix it into a salad dressing, say, or use as a glaze for meat or roast vegetables or to sweeten a citrussy pudding. The peel from just one citrus fruit is enough for at least a couple of cocktails, but if you want to make a larger batch, save spent peel in the freezer until you have enough stored up. Peel the fruit carefully, to avoid any of the white pith (unless you’re looking for a bitter flavour profile). A tasty nourishing supper with a touch of herbs and heat Make a vegetable stock by pouring 500ml of boiling water from the kettle over 1 tbsp of dried mushrooms. Bring a deep pan of water to the boil then rain in 250g of pearl barley and bring it back to the boil. Lower the heat to a simmer and let it cook for 25-30 minutes till the grains are tender. They should still have a pleasingly chewy quality. Drain and set side. Peel and roughly chop a medium-sized onion. Warm 4 tbsp of olive oil in a casserole or high-sided frying pan. Over-ripe tomatoes are to be treasured, not tossed in the bin. In fact, the riper, the better for this super-refreshing cold soup Salmorejo is a soup that’s similar to gazpacho, but easier to make and just as delicious. Tomatoes become more tasty the riper they get, so treasure, don’t trash, any squishy ones you might have in the house. (Keep them out of the fridge, too, incidentally, both to maximise their flavour and to prevent them from turning watery and woolly.) When tomatoes are at peak ripeness, as they are at this time of year, it’s time to make salmorejo. Stale bread thickens this soup, making it a satiating starter, with a lovely, velvety texture, though, as a “whole” food chef, I use wholegrain sourdough instead of the traditional white bread. Wholemeal bread still creates a delicious texture without affecting the colour too much, and means we are also saving the most nutritious part of the grain – that is, the germ and the bran – from being wasted. Add plenty of herbs for a delicious late summer soup Peel and roughly chop 1 medium-sized onion . Peel and finely slice 1 fat clove of garlic , or 2 smaller ones. In a medium-sized saucepan, warm 2 tbsp of olive oil , stir in the chopped onion and garlic. Cook over a moderate heat until pale gold and soft. You can expect this to take a good 15 minutes. Stir regularly, so the onion and garlic don’t burn. Roughly chop 450g of tomatoes (you could use canned tomatoes if you prefer, but the flavour will be less intense) and stir into the onion and garlic. Let them soften over a moderate heat for about 10 minutes, squashing them a little with a wooden spoon to release their juices. Stir in ½ to 1 tbsp of gochujang . The sweet blackberries cook down to become jammy, while the sage-speckled crumble adds a fragrant, earthy warmth. A good, buttery base is essential for any crumble bar, so bake it before adding the fruit to avoid a soggy bottom. I like to think of these as a bit of a farewell to summer and a welcome to autumn.
