The balance of heat and sweet is dazzling, but choose a kimchi whose heat is right for you. Set the oven at 200C/gas mark 6. Wipe 4 medium to large sweet potatoes and put them in a baking dish, setting them slightly apart so the heat can get round them. Bake for 40 minutes to an hour, depending on their size. These two delicious double acts make the most of the season’s richest flavour pairings I’m frying little rounds of coarsely minced pork in a pan, seasoned with lemon, mint and garlic, their edges turning sticky with caramelising meat juices. The plan, once they have all been browned, is to bake them in an earthenware casserole on a bed of onions, thyme and figs. I have introduced a little grated halloumi to the ground meat, which will feel very much at home with the figs and thyme, while keeping the meatballs sweet and juicy. For me these are part of the immutable rituals of Christmas, but our meal is something that has changed. We’ve moved on from turkey to a rich savoury duck sitting proud with its crisp skin and blush flesh. Bowls of steaming lentils sticky with dates are punctuated with bitter deep purple radicchio. This works as a perfect pairing and I no longer miss roast potatoes, although they would still eat well with this meal. Dark evenings call for quick thinking in the kitchen There was the most wonderful storm the other night, no doubt the first of many, with rain lashing the kitchen roof-lights and wind rattling the door. A proper thunder and lightning job with gusts so fierce they knocked the leaves off the fig tree. Leaves that now lie as deep as a snowdrift. The sort of weather that called for a supper of bright, heartening food. A mound of herb mash with roasted vegetables was not what I intended to bring to the table, but the weather dictated otherwise. Earthy flavours bring welcome depth to the autumn menu You need a couple of minutes without any distractions to fry a batch of fresh curry leaves. You close the kitchen door, pour a thin film of oil into a wide, shallow-sided pan and place it over a moderate flame. Strip them from their coarse stems, then rain the tiny, emerald-green leaves into the hot oil and stand back while they crackle and pop, then gradually calm themselves. (A lid will help here, but remove it once they stop spluttering.) Shake the pan, watching carefully until each leaf is translucent and lightly crisp. Lift them out with a draining spoon on to a piece of kitchen paper. You will be left with a pile of crackling, twisted, dark green leaves and a kitchen filled with a warm and smoky perfume.
