Succulent peppers with a crispy herby zingy finish Remove a thin slice from the top of each of 4 medium-sized (150g) peppers (Romano or bell. I like to use the long Romano style.) Scoop out and discard any seeds and fibres from inside, and reserve the pieces of pepper you have removed. Warm 2 tbsp of olive oil in a shallow pan over a moderate heat, place the peppers cut side down in the oil and cook for 6-7 minutes until their flesh has softened, then turn them over and cook the other side. Try not to let them collapse. Remove from the pan and place cut side up and just nudging one another in a baking dish or roasting tin. Preheat the oven to 200C/gas mark 6. Swap the egg white for aquafaba next time you make a classic sour cocktail – it’s less wasteful and keeps for longer, too One of my favourite cocktails is a sour made with pisco, whisky or mezcal, depending on the bar and my mood; it can also be made with a variety of other spirits, including gin, amaretto, brandy or rum. Usually, the spirit is paired with a similar quantity of fresh citrus juice (lime, lemon, grapefruit, etc), then shaken with sweetener and a raw egg white. The egg white creates a frothy top and gives the drink a thicker viscosity. Aquafaba (or bean cooking water) makes a great egg white replacement in cocktails, as well as in meringues et al , because the carbohydrates and proteins from the beans create a very similar foamy emulsifying agent. Not only that, but, unless you’re also making a dish involving egg yolk, a cocktail made with egg white creates potential waste, which you can save simply by using aquafaba instead. I like this relaxed style of baking. Free from the constraints of a dish or tin, the pie is left to find its own shape on a baking sheet in the oven. It is a method that works with plums, apples, slices of pumpkin or potato – firm fillings that keep their shape rather than those that are soft and saucy. This sort of pie is extremely good with onions you have cooked until deeply bronze and soft enough to crush between finger and thumb. Two hearty chicken stews for a warming autumn treat Brown meat or white? I sit on the fence liking both equally, though in different ways. In a chicken sandwich, with lemon mayonnaise, chirpy watercress and soft peppery basil leaves, I prefer thin slices from the breast (which I also spread with a fine wave of yuzu kosho). But it is the brown meat – the thighs, drumsticks and juicy little oysters hiding in the undercarriage – that I use for pies, sautés and the endless baked chicken-thigh dinners that come from this kitchen on an almost weekly basis. Sometimes the recipe itself decrees the cut that is most suitable. A slowly simmered stew will turn chicken breasts to rags, but reduce even the toughest of hard-worked thigh meat to silk. A gentle sauce made with white wine, cream and tarragon is impossible to beat with the pale flesh from the breast, especially when left in the hands of a French cook. It’s golden, it’s sticky and it’s souffle-like. There’s no better way to start the weekend than with this Spanish-inspired pudding. Torrijas are the Spanish equivalent of eggy bread. Earlier this year, while in Madrid, I had a version that used croissants instead of bread. The heady combination of buttery pastry, baked until caramelised and sticky and filled with a velvety custard, had me reeling. It was a great start to the weekend with coffee.
