Thomasina Miers' recipe for raspberry meringue sponge | The simple fix

Bright, seasonal berries peep through golden meringue set in a bed of sponge in this summery cake This simple pudding gives the baker a little rush of pleasure when it emerges from the oven, with its scent of caramelised sugar and raspberry. Rachel Roddy's favourite recipe for arancine | A kitchen in Rome

This year we may be missing out on Sicilian street food, but there’s always Alba Allota’s recipe for making these delectable, deep-fried rice balls at home As a food and recipe writer, I spend quite a lot of my time trying to find comparative measurements for things. First as a way of describing them, which is a minefield. The leaves of the basil that grows in and around Genova, for example (about which the Genovese are rightly proud, hence the need to describe it accurately), are generally no larger than a grape. What sort of grape? A grape the size of a marble. What sort of marble? A marble the size gobstoppers used to be when we were children. How old are you? And so on, until you give up and compare the leaves to a teaspoon. Just as important, and maybe more, are comparative sizes for chopping, bearing in mind that not everything can be summed up in centimetres. Cut into pieces the size of a standard dice/Scrabble tile/square of Dairy Milk , rings the size of a pound coin/ Ritz ...

Creamy Lemon Zucchini Pasta

With the help of the large holes on a box grater, zucchini transforms into a pile of soft shreds. Cook it down with olive oil, onion, and garlic and it becomes a creamy, caramelized mush that’s great spread on toast (like in the recipe this one was inspired by, Jennie Cook’s Zucchini Butter), stirred into scrambled eggs, or turned into pasta sauce with the assistance of cream and lemon juice. You’ll be amazed by how many zucchini cook down into this one dish—a very good thing when you’re staring down a pile of this prolific summer star. from Latest Recipes https://ift.tt/3lxVg3y via IFTTT

Nigel Slater’s recipes for tomatoes and anchovy, and with new potatoes

Lucky enough to have home-grown tomatoes? Give them a starring role The fruit was slow to form at first: a single green teardrop. Then another and then, as the weedy yellow flowers finished, an entire cluster. Within a month, and lapping up their fortnightly seaweed feed, my tomatoes were the size of plums. The pots stagger down the stone steps. Tucked between them are chipped terracotta tubs of marigolds, thyme and fennel. Nasturtiums are welcome squatters among the tomato vine; an attempt to usher away the black fly. This year’s see-saw of scorching heat and blessed rain has been a much-needed source of nourishment for a kitchen-step garden. Coronation Street actress Beverley, who plays Liz McDonald in the ITV soap, is now suing the hospital who performed the surgery. The 63-year-old was admitted for minor keyhole surgery in March, which led to a full hip replacement, which she claims should never have taken place following a second opinion from another doctor. Explaining her sudden disappearance from the soap, Beverley told The Mirror, ‘I have been gone because it has been the worst six months of my life. ‘I have been in the most excruciating pain you can imagine – like teeth grinding inside my hip.’ She continued, ‘But worse than that was the mental torture of thinking “is this the end for me?” A huge part of me thought I’d never be able to return to Coronation Street – that I wouldn’t even walk again.’ MORE:  Former Coronation Street star Katherine Kelly splits f...

The 55-year-old said, ‘There was never any deceit on Katie’s part but it’s got to the point now where I realise it is better for us to go our separate ways and remain friendly.’ Katie, 28, added, ‘I just want everyone to know what’s what and that we are all happy.’ Speaking about their open marriage, Mark told The Sun on Sunday , ‘When Katie first came clean to me about her boyfriend, I’d had an inkling. Liam Charles' recipe for a birthday sprinkle cake | The sweet spot

It’s someone’s birthday somewhere, and this is the perfect cake to celebrate: a retro classic that’s so simple, the whole family could have a go at making it During lockdown, the whole nation was cooking and loads of bakes shot to fame. Banana loaves, chocolate chip cookies … but, in my opinion, the most valuable player has to be the sprinkle cake. Its sheer simplicity makes it a winner. Plus, it’s perfect for birthdays – and it’s mine this week. How convenient! Continue reading... from Recipes | The Guardian https://ift.tt/3jjFk30 via IFTTT

Rosie Sykes’ recipes for roasting pan suppers

Minted roast chicken with potatoes, baked farinata with an olive dressing, baked mussels with tomato and fregola ... and if all that sounds too fancy, how about sausages and beans? Mint sauce is the secret weapon in this dish. If you have any other soft herbs knocking around, add them to the mint sauce – tarragon and parsley are favourites, and turn this into a very simple salsa verde. Meera Sodha's vegan recipe for Ugandan rolex | The new vegan

Traditionally made with eggs (“rolled eggs”) as well as veg, these Ugandan pancake wraps may end up being your new stand-in for burritos In Uganda, rolexes are very popular. Not the watches, mind, but street-side snacks comprising Indian chapatis cooked with eggs and vegetables, and rolled up - hence “rolled eggs”, or “rolex”. Mum says she remembers eating a more basic version in her youth, sometimes made with eggs and sometimes with chickpea flour, which is a store-cupboard staple in every Indian kitchen and the basis of today’s recipe. As with sandwiches and burritos, there are now endless variations on the rolex theme, but for today we’re travelling back to a particular time and place: my grandparents’ kitchen in Arua, Uganda , in 1971. Salad, starter or side: Yotam Ottolenghi's courgette recipes

Use up the annual courgette glut in an Italian-style antipasti with tomatoes and ricotta, grilled and smothered in saffron butter, or simply raw in a salad with a zippy lemon dressing Courgettes seem to go in and out of fashion. One day, they’re on every recipe platform going, the next they disappear again as quietly and as subtly as they appeared. Retro courgette boats were definitely a thing once upon a time, but a few years back they were replaced by spiralised courgette “spaghetti” as a low-carb alternative to pasta. Regardless of where they land on the popularity meter, however, courgettes are always on my mind at this time of year; their versatility gives in to a light saute, a deep char or simply left to absorb whatever’s thrown at them in their truest, raw form.
