I am not entirely sure what possessed me to bring it home, perhaps a fit of nostalgia for the harvest festival where the least-loved squash and its pale green and cream stripes would sit among bunches of carnival-coloured dahlias on the church’s stone windowsill. Whatever the reason, it is still in the fridge and beginning to haunt me. I am less ambivalent than most about the last of the green-fleshed summer squash. The flesh sponges up garlic, herbs and pan juices deliciously and when left to fry until golden, the edges will (eventually) caramelise sweetly enough. They are cheap – I bought mine for less than £1 – and all too often appear in the weekly late-summer vegetable delivery box. Even peeled and seeded there is a lot of flesh in a 1kg marrow. Figs don’t always ripen fully in more northerly climates, but green ones can be preserved in syrup or honey and stored for eating with cheese or on toast In a climate such as the UK’s, where figs don’t often ripen fully, it’s good to know that this glorious fruit doesn’t have to go to waste. Green figs preserved in syrup, or vye konfyt , as they’re called in South Africa, can be enjoyed on cheeseboards, pancakes and other desserts, or even eaten straight from the jar. I steep mine in honey, rather than sugar syrup, so they’re less sweet. Use hard, unripe figs so they keep their shape during the cooking (if you have semi-ripe or soft green figs, consider making fig jam instead). A juicy meaty dish full of spicy, herby flavours Put 500g of minced lamb in a mixing bowl, add 1 tbsp of black mustard seeds (they are less hot than the yellow kind), 4 tbsp of white sesame seeds , 2 chopped spring onions , 2 tsp of garam masala and a generous seasoning of salt . Mix it all together, then pinch into 8 pieces and flatten into patties roughly the diameter of a digestive biscuit. Warm a little oil in a shallow pan that doesn’t stick, place the patties in it, cooking them in two or more batches depending on the size of your pan, and fry them for a minute or two on each side until they are patchily golden. Courgettes in season are cheap, easy to cook and completely dependable If you grow your own courgettes, you have the opportunity to pick them small – barely thicker than your index finger – and eat them raw. You can slice them thinly into tiny coins and marinate them with olive oil, lemon juice and basil leaves for an effortless salad. Picked in this diminutive state, their flesh is sweet and waxy, their skin thin and pale. A quiet and elegant late summer dish. As they get larger, I like to sauté my courgettes with the fat from pancetta or streaky bacon, then sprinkle them with white wine vinegar and whole parsley leaves. You can shave a large courgette into ribbons with a vegetable peeler and brand it on the griddle then dress with chopped anchovies, olive oil and finely chopped and seeded tomatoes.
