The McDonald's Chicken Big Mac is FINALLY coming to the UK this week

The long-awaited Chicken Big Mac is coming to McDonald’s in the UK this week.  The fast food chain announced they’ll be swapping their legendary beef patties for crispy chicken fillets as the Chicken Big Mac is set to land on menus in days, but for a limited time only. Fans were ecstatic when the burger giant confirmed plans to introduce the twist on the classic Big Mac in the UK, having launched the Chicken Big Mac in the likes of Australia in the past. Removing the one you want is like playing vegetable Jenga. I like my aubergines baked until on the verge of being overcooked. So silky, so plump, so melting, they’re almost more olive oil than aubergine. And let’s face it, without olive oil there is very little point to this vegetable (fruit to the pedantic). Chowder, but not as you might know it, featuring velvety potato, pungent alliums, succulent sweetcorn and the warmth of chipotle Back in the mists of time (from the 16th century onwards), French fishermen from Brittany travelled back and forth to Newfoundland in Canada to fish. At some point along the way, it’s thought their fish and potato stew cooked in a chaudière became American chowder. Today, chowder has splintered into many variations; some are made with tomatoes and others without any fish. My recipe borrows mostly from a New England variation made with sweetcorn, and is a perfect winter warmer. In it, potato offers velvet reassurance, sweetcorn pops with optimism, leeks and onion give sweet and savoury pungency and, for a bit of sparkle, there’s a salty smoky chipotle oil to finish. I frequently find metaphorical hugs in rich and savoury, or in cheesy and creamy dishes; things that welcome us with a warm, rounded embrace, countering the sharper side of winter. There’s quite a bit going on in today’s first dish – tart, bitter, chilli and crunch – but ultimately it all sinks into an ambrosial puddle of beans, while the second is gloriously beige.
