I have been woken by the wind from storm something-or-other thundering down the chimney in the bedroom. It is what I call a porridge morning. A cold Sunday morning in winter can only ever mean porridge. Fancy porridge, with butter and stewed fruits, with seeds and a thick slice of butter, its edges melting on the surface. Apples – “cookers” stewed to a fluff – introduce a pleasingly tart edge to your oatmeal, but a quicker, almost instant, alternative are the blackberries and blueberries you can tip into a pan, add a splash of lemon and then in seconds spoon them steaming over your porridge. I keep currants, damsons and gooseberries in the freezer specially for this purpose. Caldo verde is a humble Portuguese soup traditionally made with cabbage, potatoes and often chorizo, but you can add any other leftover greens or meat Our daughter loves to leave her greens on her plate, and we (almost as much) love trying to come up with ways of reincorporating them into her next meal. We blend them into batter with other leftover vegetables to make rainbow pancakes ; or finely chop, saute and add cream, to make creamed greens; or add them to soups and stews such as today’s classic Portuguese soup that’s traditionally made with cabbage, potatoes and often chorizo. Mine is a vegetarian version that we used to serve at Poco in Bristol and that our daughter will wolf down quite happily. At the restaurant, we’d add celeriac and sea lettuce as well as potato, to give the soup some extra umami; you could also add leftover cooked meat such as shredded roast chicken, sliced ham or sausage. Arrabiata means ‘angry’ in Italian, and if you like yours really furious, you can add more chilli or chilli powder. However, for a springtime seasonal twist, this version also has sliced chicken and asparagus. Make it between April and June, when British asparagus is in season, for the best flavour. This speedy sauce is simple and lightly cooked. Once you have slices the onion, chicken and asparagus, you only need 15 minutes to cook it – only a couple of minutes longer than it takes to cook the spaghetti.
